If you are looking for a non-mayo slaw, this is really good. I got the recipe out of the BBQ Southern magazine. It is a must on pulled pork sandwiches.
Recipe
6 Cups Cabbage
1 cup Matchstick carrots
2 limes
3 tablespoons honey
1 cup cilantro
1/2 Cup canola oil
1 teaspoon dry mustard
1 teaspoon minced garlic
1 teaspoon Kosher Salt
1/2 tsp of black pepper
1 small onion
Whisk all honey, lime, oil, garlic, dry mustard and them combine all ingredients. Refrigerate
for about 5-6 hours.

Skirt Steak wrapped in veggies with a balsamic shallot glaze on top
So this is probably one of my favorites. Its a skirt steak that has rolled up in zucchini, red peppers, carrots, and green onion. You marinate the steak for at least 3 hours :) After marinating is finished you cook the sliced veggies in a pan with some minced garlic and a bit of EVOO. Roll the veggies in the steak and put back in the fridge until ready to cook on the grill or in the pan.
I cook them on the grill which I believe gives them nice flavor but you can also cook them in the pan if you prefer.
While they are cooking you can prepare your glaze that goes on top of them.
Marinade for steak
Montreal season (to taste )
EVOO (enough to coat both sides without smothering )
Liquid smoke (just a tad bit to run over steak)
Kosher Salt and cracked Pepper
Marinade for veggies
EVOO
Herb seasoning or Italian seasoning
2 tablespoons minced garlic
Glaze
1/4 cup of balsamic vinegar
3/4 cup of dark brown sugar
1 shallot minced
1/4 cup of beeth broth
2 tablespoons butter
sauté butter with shallots and then add the remaining ingredients stir till mixed well and cook on med high for about 5-7 minutes

Yuumy Delights Flank Steak Gorgonzola Pizza)
So this is one of the hubbys favorite. May not be the best thing but you can have one slice and its not going to kill you.
Ingredients
Handful of arugula
Flank Steak (I used a half of one) other half I reserved for another meal.
3/4 cup to 1 cup of Gorgonzola Cheese
1/2 cup of parmesan cheese
5-8 cherry tomatoes sliced
I used a ready Pillsbury crust or you can buy premade from your deli
balsamic drizzle
Either go with a dressing such as Kens or you can make your own (will be a little more stout)
1 cup of balsamic vinegar
3 tablespoons honey
dash of pepper
(If you make the drizzle yourself- boil vinegar and stir in honey and black pepper) you can add more honey if your drizzle is too bitter for you.

2 T. Worcestershire sauce
1 T. Dijon mustard
1 T. minced garlic

Food I love (Avocado with broc slaw and sweet chili shrimp)
So I usually eat this for lunch or at least 3 times a week for lunch on most occasions. I have one full avocado sliced and about 1/2 cup of broc slaw with about 6 shrimp (pop corn) with a sweet chili spicy sauce on them. So good and roughly about 280 calories or less.
Avocado - aprox 140 in calories (good calories)
Shrimp - 6 shrimp = about 66 calories
One teaspoon of spicy mayo - 33 calories
2 tsp of Asian sweet chili sauce - 30 calories

First post
So I wanted to create this as a lot of people were wanting recipes and easy things to make with their kids. I shop once a week (unless I forget something) and make my meal list every Sunday. I try to do crock pot meals. Esp since kevin is in basketball season. They are a lot easier and can be very tasty too. Hope I can give you some ideas for some good eats and treats.
